The house
Altoni has been making fresh pasta since 1993, and by now it turns up in a great many Belgian kitchens. The appeal is not novelty. It is that the quality holds, order after order, which is the only thing a chef really needs from a pasta supplier.
The range is wide — classic and organic, filled and pre-cooked, sugo and lasagne — and the seasonal specialities keep it moving: white asparagus when the season opens, burrata and sun-dried tomato medaglioni when it does not.
